Lately I've been recording "stereo" acoustic guitar tracks on both channels of a Korg MR-1 (actually a blend of a mic, and the builtin piezo pickup).
After that is done, I merge those tracks into a single track, fed into one channel of another Korg MR-1, while I add the vocal on the second channel.
I mix the DSD on my Sony Vaio, with the Soundreality (SigmaTel) chip & Sony's SonicStage.
Korg's AudioGate let's me convert the output format, as needed.
The Korgs were on clearance, $560 for the pair.
The Vaio is a re-furb.
