There is a case to be made that "they wrote what they knew" when they created a God and HIS image.
Genesis made no mention of billions of galaxies, just dominion over what was visible to a mortal eye at the time...but it could have.

It could have read...
"BTW...the night sky collectively referred to as "the heavens" is actually billions of stars each such as the sun (gigantuan burning fireballs) and also there are other complete galaxies. Billions of them."

Genesis also divided nights into days seemingly before nights and days existed.
There is a case to be made that all of this is the flip side of the same coin that is in quotes above.
